There are so many possibilities with oil paints, and it comes down to a science. You just have to be methodical about your work to get some consistent strokes together in conjunction with the right colors.

Realism is in your mind. If this medium inspires you, then go for it. Having more time to work wet is an advantage if you need more time to think and learn how to make the painting work for you. Sometimes it just takes a good art class to give you the fundamentals rather than hacking methods on your own.

Personally I have found it easier in oils than acrylics, but I also think it is one of the most time consuming and expensive ways to paint.

Good luck!

Other than take forever to dry? Haha.

Textures and realism are going to come down to brushes, what you paint on, and personal skill. Using a different paint won't make your paintings anymore realistic if you don't know what you're doing. I'm no expert when it comes to physically painting so I've put a link in the source for you to check out, since it's got the information laid out better than I could ever hope for.
